
Spicy Mediterranean Egg Shakshuka

Ingredients:
- 2 tbsp Olive Oil
- 3 cloves, minced Garlic
- 1 large, diced Red Bell Pepper
- 1 diced Jalapeno Pepper
- 1 tsp Ground Cumin
- 0.5 tsp Crushed Red Pepper Flakes
- 1 can (14.5 oz) Canned Diced Tomatoes
- 5 Eggs
- 1 tbsp, chopped Fresh Parsley
- 0.25 cup, crumbled Feta Cheese
- to taste Salt and Pepper
Instructions:
- Heat the olive oil in a large non-stick skillet over medium heat.
- Add minced garlic, diced bell pepper, and jalapeno. Saute until vegetables start to soften.
- Add the cumin and red pepper flakes to skillet and stir well.
- Add canned diced tomatoes. Season with salt and pepper. Let the sauce simmer for 10 to 15 minutes until it starts to reduce.
- Make small wells in the sauce and crack the eggs into each well. Cover the skillet and cook over medium-low heat until the eggs are done to your liking, approximately 5-7 minutes for soft eggs.
- Top with chopped parsley and crumbled feta cheese. Serve hot with bread.
