Spicy Mediterranean Egg Shakshuka

Ingredients:

  • 2 tbsp Olive Oil
  • 3 cloves, minced Garlic
  • 1 large, diced Red Bell Pepper
  • 1 diced Jalapeno Pepper
  • 1 tsp Ground Cumin
  • 0.5 tsp Crushed Red Pepper Flakes
  • 1 can (14.5 oz) Canned Diced Tomatoes
  • 5 Eggs
  • 1 tbsp, chopped Fresh Parsley
  • 0.25 cup, crumbled Feta Cheese
  • to taste Salt and Pepper

Instructions:

  1. Heat the olive oil in a large non-stick skillet over medium heat.
  2. Add minced garlic, diced bell pepper, and jalapeno. Saute until vegetables start to soften.
  3. Add the cumin and red pepper flakes to skillet and stir well.
  4. Add canned diced tomatoes. Season with salt and pepper. Let the sauce simmer for 10 to 15 minutes until it starts to reduce.
  5. Make small wells in the sauce and crack the eggs into each well. Cover the skillet and cook over medium-low heat until the eggs are done to your liking, approximately 5-7 minutes for soft eggs.
  6. Top with chopped parsley and crumbled feta cheese. Serve hot with bread.
