Spicy Mediterranean Chicken Shakshuka

Ingredients:

  • 2 tablespoons Olive oil
  • 2 pieces Chicken breasts
  • 1 large Onion
  • 1 medium Red bell pepper
  • 2 cloves Garlic cloves
  • 1/2 teaspoon Red chili flakes
  • 1 teaspoon Paprika
  • 1 teaspoon Cumin
  • 1 can Canned diced tomato
  • 4 large Eggs
  • to taste Salt
  • to taste Black pepper
  • a handful chopped for garnish Fresh parsley or cilantro

Instructions:

  1. Heat oil in a large pan over medium heat.
  2. Add chicken and cook until it is no longer pink.
  3. Remove the chicken from the pan and set it aside.
  4. In the same pan, add onion, bell pepper and garlic. Saute until they begin to soften.
  5. Stir in spices like red chili flakes, paprika and cumin.
  6. Add diced tomatoes and bring the mix to a simmer.
  7. Add the cooked chicken back to the pan and let it simmer for about 10 minutes.
  8. Break the eggs into the pan over the tomato and chicken mixture, cover the pan and cook until the eggs are done to your liking.
  9. Season with salt and black pepper.
  10. Serve with fresh parsley or cilantro on top.
