
Spicy Mediterranean Chicken Shakshuka

Ingredients:
- 2 tablespoons Olive oil
- 2 pieces Chicken breasts
- 1 large Onion
- 1 medium Red bell pepper
- 2 cloves Garlic cloves
- 1/2 teaspoon Red chili flakes
- 1 teaspoon Paprika
- 1 teaspoon Cumin
- 1 can Canned diced tomato
- 4 large Eggs
- to taste Salt
- to taste Black pepper
- a handful chopped for garnish Fresh parsley or cilantro
Instructions:
- Heat oil in a large pan over medium heat.
- Add chicken and cook until it is no longer pink.
- Remove the chicken from the pan and set it aside.
- In the same pan, add onion, bell pepper and garlic. Saute until they begin to soften.
- Stir in spices like red chili flakes, paprika and cumin.
- Add diced tomatoes and bring the mix to a simmer.
- Add the cooked chicken back to the pan and let it simmer for about 10 minutes.
- Break the eggs into the pan over the tomato and chicken mixture, cover the pan and cook until the eggs are done to your liking.
- Season with salt and black pepper.
- Serve with fresh parsley or cilantro on top.
