
Spicy Mediterranean Breakfast Pasta

Ingredients:
- 1-pound Pasta
- 3 tablespoons Extra-virgin olive oil
- 3 cloves Garlic
- 1/2 teaspoon Red pepper flakes
- 1 can Canned diced tomatoes
- 1/2 cup Fresh basil
- 1/2 cup Parmesan cheese
- to taste Salt and Pepper
- 4 Eggs
Instructions:
- Boil a pot of salted water and cook the pasta until al dente. Drain and set aside.
- Heat the olive oil in a large pan over medium heat. Add the minced garlic and red pepper flakes, stir until fragrant.
- Add the canned tomatoes and their juice to the pan. Stir until heated through, about 3-4 minutes.
- Stir in the cooked pasta, fresh basil, and half of the parmesan cheese. Season with salt and pepper. Keep warm over low heat.
- In another pan, fry the eggs to your liking.
- Divide the pasta among four plates. Top each serving with a fried egg and sprinkle the remaining parmesan cheese on top.
