Spicy Mediterranean Breakfast Pasta

Ingredients:

  • 1-pound Pasta
  • 3 tablespoons Extra-virgin olive oil
  • 3 cloves Garlic
  • 1/2 teaspoon Red pepper flakes
  • 1 can Canned diced tomatoes
  • 1/2 cup Fresh basil
  • 1/2 cup Parmesan cheese
  • to taste Salt and Pepper
  • 4 Eggs

Instructions:

  1. Boil a pot of salted water and cook the pasta until al dente. Drain and set aside.
  2. Heat the olive oil in a large pan over medium heat. Add the minced garlic and red pepper flakes, stir until fragrant.
  3. Add the canned tomatoes and their juice to the pan. Stir until heated through, about 3-4 minutes.
  4. Stir in the cooked pasta, fresh basil, and half of the parmesan cheese. Season with salt and pepper. Keep warm over low heat.
  5. In another pan, fry the eggs to your liking.
  6. Divide the pasta among four plates. Top each serving with a fried egg and sprinkle the remaining parmesan cheese on top.
