Spicy Mediterranean Breakfast Fish Stew

Ingredients:

  • 2 tablespoons Olive oil
  • 1 medium, diced Onion
  • 3 cloves, minced Garlic
  • 1.5 pounds, diced Fish
  • 2 cups, diced Tomatoes
  • 2 teaspoons Red pepper flakes
  • 1 teaspoon Smoked paprika
  • 4 cups Fish stock
  • 1 bunch, chopped Parsley
  • to taste Salt and pepper
  • as needed Crusty bread

Instructions:

  1. 1. Heat oil in a large pot over medium heat. Add onions and garlic, cook until onions are translucent.
  2. 2. Add diced fish, cook until slightly browned.
  3. 3. Add tomatoes, red pepper flakes, smoked paprika, stirring well.
  4. 4. Add fish stock, bring to a simmer and cook for 20 minutes.
  5. 5. Season with salt and pepper, and add chopped parsley.
  6. 6. Serve hot with crusty bread on the side.
