
Spicy Mediterranean Breakfast Fish Stew

Ingredients:
- 2 tablespoons Olive oil
- 1 medium, diced Onion
- 3 cloves, minced Garlic
- 1.5 pounds, diced Fish
- 2 cups, diced Tomatoes
- 2 teaspoons Red pepper flakes
- 1 teaspoon Smoked paprika
- 4 cups Fish stock
- 1 bunch, chopped Parsley
- to taste Salt and pepper
- as needed Crusty bread
Instructions:
- 1. Heat oil in a large pot over medium heat. Add onions and garlic, cook until onions are translucent.
- 2. Add diced fish, cook until slightly browned.
- 3. Add tomatoes, red pepper flakes, smoked paprika, stirring well.
- 4. Add fish stock, bring to a simmer and cook for 20 minutes.
- 5. Season with salt and pepper, and add chopped parsley.
- 6. Serve hot with crusty bread on the side.
