Spicy Mediterranean Beef Stew

Ingredients:

  • 1 pound Beef Stew Meat
  • 1 tbsp Olive Oil
  • 1 medium Onion
  • 3 Garlic cloves
  • 1 cup Red Wine
  • 2 tsp Spicy Paprika
  • 1 tsp Cayenne Pepper
  • 2 medium Fresh Tomatoes
  • 3 cups Beef Broth
  • 1 cup Kalamata Olives
  • 1 bunch Fresh Parsley
  • to taste Salt and Pepper

Instructions:

  1. 1. Heat olive oil in a large pot over medium heat. Add beef, season with salt and pepper, and brown on all sides. Remove beef and set aside.
  2. 2. In the same pot, add onion and garlic, cook until onion is soft and translucent.
  3. 3. Add red wine to deglaze the pot, scraping up any browned bits from the bottom.
  4. 4. Return beef to pot, and add spicy paprika, cayenne pepper, tomatoes and beef broth. Bring to a boil, then reduce to a simmer.
  5. 5. Cover pot and let simmer for 1.5 hours, stirring occasionally.
  6. 6. After about 1.5 hours, add kalamata olives and continue to simmer for another 30 minutes until beef is tender.
  7. 7. Stir in fresh parsley and season with more salt and pepper if needed. Serve hot with bread or over cooked rice.
