Spicy Mediterranean Beef Stew

Ingredients:
- 1 pound Beef Stew Meat
- 1 tbsp Olive Oil
- 1 medium Onion
- 3 Garlic cloves
- 1 cup Red Wine
- 2 tsp Spicy Paprika
- 1 tsp Cayenne Pepper
- 2 medium Fresh Tomatoes
- 3 cups Beef Broth
- 1 cup Kalamata Olives
- 1 bunch Fresh Parsley
- to taste Salt and Pepper
Instructions:
- 1. Heat olive oil in a large pot over medium heat. Add beef, season with salt and pepper, and brown on all sides. Remove beef and set aside.
- 2. In the same pot, add onion and garlic, cook until onion is soft and translucent.
- 3. Add red wine to deglaze the pot, scraping up any browned bits from the bottom.
- 4. Return beef to pot, and add spicy paprika, cayenne pepper, tomatoes and beef broth. Bring to a boil, then reduce to a simmer.
- 5. Cover pot and let simmer for 1.5 hours, stirring occasionally.
- 6. After about 1.5 hours, add kalamata olives and continue to simmer for another 30 minutes until beef is tender.
- 7. Stir in fresh parsley and season with more salt and pepper if needed. Serve hot with bread or over cooked rice.
