
Spicy Mediterranean Beef Skillet

Ingredients:
- 1 lb Beef, lean ground
- 2 Tbsp Olive Oil
- 3 cloves Garlic, minced
- 1 large Red Bell Pepper, chopped
- 2 tsp Cumin, ground
- 1 tsp Red Pepper Flakes
- 1 15-oz can Tomatoes, diced
- 4 cups Baby Spinach
- 0.5 cup Feta Cheese, crumbled
- to taste Fresh Parsley, chopped
- to taste Salt
- to taste Black Pepper, ground
Instructions:
- Heat olive oil in a large skillet on medium-high heat.
- Add the ground beef, breaking it up with a spoon, and cook until browned.
- Add the garlic, red bell pepper, cumin, and red pepper flakes to the skillet. Cook until the vegetables are softened.
- Stir in the diced tomatoes with their juices and spinach. Reduce the heat to low and let the mixture simmer until the spinach is wilted.
- Remove the skillet from the heat and sprinkle with feta cheese and fresh parsley. Season with salt and ground black pepper to taste before serving.
