Spicy Mediterranean Baked Fish

Ingredients:

  • 4 pieces White Fish Fillets
  • 2 tbsp Olive oil
  • 1 lemon, squeezed Fresh Lemon Juice
  • 4 cloves Garlic cloves, minced
  • 1 tsp Red Chilli Flakes
  • 200 g Cherry Tomatoes
  • 1 bunch Fresh Parsley, finely chopped
  • to taste Salt
  • to taste Black Pepper

Instructions:

  1. Preheat the oven to 190°C (375°F).
  2. Drizzle some olive oil in a baking dish. Place the fish fillets in the dish.
  3. In a bowl, combine the remaining olive oil, lemon juice, minced garlic, red chilli flakes, salt, and pepper. Mix until well blended.
  4. Pour the spicy mixture over the fish fillets, making sure it's evenly distributed. Scatter cherry tomatoes around the fish.
  5. Bake in the preheated oven for 20-25 minutes, or until the fish is cooked through and flakes easily with a fork.
  6. Remove from the oven and garnish with fresh parsley before serving. Serve hot, ideally with a side of couscous or garlicky greens.
