
Spicy Mediterranean Baked Fish

Ingredients:
- 4 pieces White Fish Fillets
- 2 tbsp Olive oil
- 1 lemon, squeezed Fresh Lemon Juice
- 4 cloves Garlic cloves, minced
- 1 tsp Red Chilli Flakes
- 200 g Cherry Tomatoes
- 1 bunch Fresh Parsley, finely chopped
- to taste Salt
- to taste Black Pepper
Instructions:
- Preheat the oven to 190°C (375°F).
- Drizzle some olive oil in a baking dish. Place the fish fillets in the dish.
- In a bowl, combine the remaining olive oil, lemon juice, minced garlic, red chilli flakes, salt, and pepper. Mix until well blended.
- Pour the spicy mixture over the fish fillets, making sure it's evenly distributed. Scatter cherry tomatoes around the fish.
- Bake in the preheated oven for 20-25 minutes, or until the fish is cooked through and flakes easily with a fork.
- Remove from the oven and garnish with fresh parsley before serving. Serve hot, ideally with a side of couscous or garlicky greens.
