Spicy Mango Chicken Stir Fry

Ingredients:

  • 2 pieces Boneless chicken breasts
  • 1 Fresh mango
  • 2 tablespoons Olive oil
  • 1 Red bell pepper
  • 2 Garlic cloves
  • 3 stems Green onions
  • 1 tablespoon Fresh ginger
  • 3 tablespoons Soy sauce
  • 1 teaspoon Red chili flakes

Instructions:

  1. Season chicken pieces with salt and pepper. Heat oil in a wok or large frying pan over medium-high heat. Cook chicken pieces until lightly golden and cooked through. Remove and set aside.
  2. In the same wok, stir-fry red bell pepper and garlic until they start to soften. Add mango, ginger, and green onions. Continue to cook, stirring frequently, for about 3-5 minutes.
  3. Return chicken to the wok, add soy sauce, chili flakes and stir well to combine. Cook for a further 2-3 minutes until everything is well coated and hot.
  4. Adjust seasonings as per your taste. Sprinkle with additional chili flakes if desired. Serve hot.
