Spicy Mango Chicken Enchiladas

Ingredients:

  • 2 pieces Boneless chicken breast
  • 1 whole Ripe mango
  • 2 whole Jalapeno pepper
  • 8 whole Flour tortillas
  • 1 cup Red enchilada sauce
  • 1 cup Monterey Jack cheese
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 1/2 cup Cilantro
  • 2 tablespoon Olive oil

Instructions:

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Season chicken with salt and pepper, then grill on medium-high heat for about 6 minutes per side, or until the juices run clear. Let it cool down and shred the chicken.
  3. Chop the mango and jalapeno finely and mix together. Add this mixture to the shredded chicken.
  4. Heat olive oil in a saucepan, then add the enchilada sauce and simmer for 5 minutes.
  5. Soak each tortilla in the enchilada sauce, fill with the chicken mixture, and cheese, then roll up and place in a baking dish.
  6. Pour remaining enchilada sauce over the top of the enchiladas and sprinkle with remaining cheese and fresh cilantro.
  7. Bake uncovered in the preheated oven until the enchiladas are bubbly and the cheese is lightly browned on top, about 20 minutes.
  8. Serve hot with a garnish of extra cilantro, if desired. Enjoy your spicy mango chicken enchiladas.
