
Spicy Mango Chicken Enchiladas

Ingredients:
- 2 pieces Boneless chicken breast
- 1 whole Ripe mango
- 2 whole Jalapeno pepper
- 8 whole Flour tortillas
- 1 cup Red enchilada sauce
- 1 cup Monterey Jack cheese
- 1 teaspoon Salt
- 1/2 teaspoon Pepper
- 1/2 cup Cilantro
- 2 tablespoon Olive oil
Instructions:
- Preheat oven to 375 degrees F (190 degrees C).
- Season chicken with salt and pepper, then grill on medium-high heat for about 6 minutes per side, or until the juices run clear. Let it cool down and shred the chicken.
- Chop the mango and jalapeno finely and mix together. Add this mixture to the shredded chicken.
- Heat olive oil in a saucepan, then add the enchilada sauce and simmer for 5 minutes.
- Soak each tortilla in the enchilada sauce, fill with the chicken mixture, and cheese, then roll up and place in a baking dish.
- Pour remaining enchilada sauce over the top of the enchiladas and sprinkle with remaining cheese and fresh cilantro.
- Bake uncovered in the preheated oven until the enchiladas are bubbly and the cheese is lightly browned on top, about 20 minutes.
- Serve hot with a garnish of extra cilantro, if desired. Enjoy your spicy mango chicken enchiladas.
