
Spicy Mango and Avocado Tacos

Ingredients:
- 2 whole Fresh mangoes
- 2 whole Avocados
- 2 tbsp Lime juice
- 0.5 whole Red onion
- 2 whole Jalapeno peppers
- 0.25 cup Fresh cilantro leaves
- 8 whole Soft corn tortillas
- 1 tbsp Olive oil
- to taste Salt
- to taste Pepper
Instructions:
- Peel and dice the mangoes and avocados.
- Finely chop the red onion and jalapeno peppers. Remember to remove the seeds from the jalapenos to reduce the heat if you prefer a milder spice. For extra heat, leave some or all of the seeds in.
- In a large bowl, combine the diced mangoes, avocados, chopped onion, jalapenos, cilantro, lime juice, olive oil, salt, and pepper. Toss to evenly combine all the ingredients.
- Heat the soft corn tortillas in a dry skillet over medium-high heat, until they are warm and slightly toasted.
- Place a generous amount of the mango and avocado mixture onto each warm tortilla.
- Serve your spicy mango and avocado tacos immediately, garnished with extra fresh cilantro leaves, if desired.
