Spicy Mango and Avocado Tacos

Ingredients:

  • 2 whole Fresh mangoes
  • 2 whole Avocados
  • 2 tbsp Lime juice
  • 0.5 whole Red onion
  • 2 whole Jalapeno peppers
  • 0.25 cup Fresh cilantro leaves
  • 8 whole Soft corn tortillas
  • 1 tbsp Olive oil
  • to taste Salt
  • to taste Pepper

Instructions:

  1. Peel and dice the mangoes and avocados.
  2. Finely chop the red onion and jalapeno peppers. Remember to remove the seeds from the jalapenos to reduce the heat if you prefer a milder spice. For extra heat, leave some or all of the seeds in.
  3. In a large bowl, combine the diced mangoes, avocados, chopped onion, jalapenos, cilantro, lime juice, olive oil, salt, and pepper. Toss to evenly combine all the ingredients.
  4. Heat the soft corn tortillas in a dry skillet over medium-high heat, until they are warm and slightly toasted.
  5. Place a generous amount of the mango and avocado mixture onto each warm tortilla.
  6. Serve your spicy mango and avocado tacos immediately, garnished with extra fresh cilantro leaves, if desired.
