Spicy Mandarin Chicken Stir Fry

Ingredients:

  • 2 Chicken breasts
  • 1 can Mandarin oranges
  • 2 teaspoons grated Fresh ginger
  • 4 cloves Garlic
  • 2 tablespoons Soy sauce
  • 1 teaspoon Cornstarch
  • 2 teaspoons Red chili flakes
  • 4 chopped Green onions
  • 1 tablespoon Sesame oil
  • 2 tablespoons Cooking oil

Instructions:

  1. 1. Slice the chicken breasts into thin strips.
  2. 2. Heat the cooking oil in a wok or large frying pan over medium-high heat.
  3. 3. Add the garlic and ginger, sautéing for 2 minutes until fragrant.
  4. 4. Add the chicken strips and stir fry until they're no longer pink in the middle.
  5. 5. In a small bowl, mix the soy sauce, cornstarch, and red chili flakes.
  6. 6. Drain the mandarin oranges, reserving 1/4 cup of the juice.
  7. 7. Add the sauce mixture, mandarin orange juice, and the sesame oil to the wok, stirring well to coat the chicken.
  8. 8. Cook for 5 minutes until the sauce has thickened.
  9. 9. Just before serving, stir in the mandarin oranges and green onions, heating for 1-2 minutes.
  10. 10. Serve the stir fry over steamed rice and enjoy.
