
Spicy Mandarin Chicken Stir Fry

Ingredients:
- 2 Chicken breasts
- 1 can Mandarin oranges
- 2 teaspoons grated Fresh ginger
- 4 cloves Garlic
- 2 tablespoons Soy sauce
- 1 teaspoon Cornstarch
- 2 teaspoons Red chili flakes
- 4 chopped Green onions
- 1 tablespoon Sesame oil
- 2 tablespoons Cooking oil
Instructions:
- 1. Slice the chicken breasts into thin strips.
- 2. Heat the cooking oil in a wok or large frying pan over medium-high heat.
- 3. Add the garlic and ginger, sautéing for 2 minutes until fragrant.
- 4. Add the chicken strips and stir fry until they're no longer pink in the middle.
- 5. In a small bowl, mix the soy sauce, cornstarch, and red chili flakes.
- 6. Drain the mandarin oranges, reserving 1/4 cup of the juice.
- 7. Add the sauce mixture, mandarin orange juice, and the sesame oil to the wok, stirring well to coat the chicken.
- 8. Cook for 5 minutes until the sauce has thickened.
- 9. Just before serving, stir in the mandarin oranges and green onions, heating for 1-2 minutes.
- 10. Serve the stir fry over steamed rice and enjoy.
