Spicy Mandarin Chicken

Ingredients:

  • 800 grams Chicken breast, boneless & skinless
  • 2 cups Mandarin oranges
  • 1 cup Soy sauce
  • 2 tablespoons Fresh ginger, minced
  • 2 cloves Garlic, minced
  • 1 teaspoon Red pepper flakes
  • 2 tablespoons Cornstarch
  • 3 tablespoons Vegetable oil

Instructions:

  1. Cut the chicken into bite-sized pieces, season with salt and pepper, and set aside.
  2. In a saucepan, combine the mandarin oranges, soy sauce, ginger, garlic, and red pepper flakes. Bring to a simmer over medium heat.
  3. In a small bowl, mix cornstarch with 2 tablespoons of cold water to create a slurry, then stir it into the sauce. Continue to simmer until the sauce thickens, about 5 minutes.
  4. In a large skillet, heat the vegetable oil over medium-high heat. Add the chicken pieces and cook until browned and cooked through, about 10 minutes.
  5. Pour the mandarin orange sauce over the chicken and stir to coat.
  6. Serve the spicy mandarin chicken with rice or noodles, garnish with green onions or sesame seeds if desired, and enjoy your flavorful Chinese dinner!
