Spicy Late-Night Chinese Fish Stir Fry

Ingredients:

  • 2 fillets White Fish (like Tilapia or Cod)
  • 2 tablespoons Soy Sauce
  • 1 tablespoon Corn Starch
  • 2 pcs Fresh Red Chilies
  • 2 pcs Garlic Cloves
  • 1 inch Fresh Ginger
  • 2 tablespoons Vegetable Oil
  • 2 stalks Green Onions
  • 1/2 teaspoon Ground Sichuan Pepper

Instructions:

  1. First, rinse the fish fillets and dab them dry with a paper towel.
  2. In a bowl, mix the soy sauce, and corn starch. Marinate the fish fillets in the mixture and set aside for 10 minutes.
  3. While the fish is marinating, finely chop the chilies, garlic cloves, ginger, and green onions. Make sure to remove seeds from chilies if less heat is preferred.
  4. Heat vegetable oil in a skillet or wok over high heat. Once it's hot, carefully add your marinated fish and sear each side for about 2-3 minutes until it gets a nice and crispy brown color. Remove from the skillet and set aside.
  5. In the same skillet, add the finely chopped ingredients and Sichuan pepper. Stir-fry for about a minute until they start to smell aromatic.
  6. Add the seared fish back into the skillet and gently mix everything together, being careful not to break the fish.
  7. Cook for a further 2-3 minutes, making sure that the fish is fully cooked.
  8. Plate and garnish with the remaining green onions.
