
Spicy Late-Night Chinese Fish Stir Fry

Ingredients:
- 2 fillets White Fish (like Tilapia or Cod)
- 2 tablespoons Soy Sauce
- 1 tablespoon Corn Starch
- 2 pcs Fresh Red Chilies
- 2 pcs Garlic Cloves
- 1 inch Fresh Ginger
- 2 tablespoons Vegetable Oil
- 2 stalks Green Onions
- 1/2 teaspoon Ground Sichuan Pepper
Instructions:
- First, rinse the fish fillets and dab them dry with a paper towel.
- In a bowl, mix the soy sauce, and corn starch. Marinate the fish fillets in the mixture and set aside for 10 minutes.
- While the fish is marinating, finely chop the chilies, garlic cloves, ginger, and green onions. Make sure to remove seeds from chilies if less heat is preferred.
- Heat vegetable oil in a skillet or wok over high heat. Once it's hot, carefully add your marinated fish and sear each side for about 2-3 minutes until it gets a nice and crispy brown color. Remove from the skillet and set aside.
- In the same skillet, add the finely chopped ingredients and Sichuan pepper. Stir-fry for about a minute until they start to smell aromatic.
- Add the seared fish back into the skillet and gently mix everything together, being careful not to break the fish.
- Cook for a further 2-3 minutes, making sure that the fish is fully cooked.
- Plate and garnish with the remaining green onions.
