Spicy Japanese Vegetable Stir Fry

Ingredients:

  • 6 cups Fresh mixed vegetables - bell peppers, carrots, zucchini, bok choy, snap peas
  • 2 tbsp Sesame oil
  • 1 tbsp Fresh ginger, minced
  • 2 cloves Garlic, minced
  • cup Soy sauce
  • 1 tbsp Mirin
  • 2 tbsp Sriracha sauce
  • 1 tsp Red chili flakes
  • 3 Scallions, chopped
  • 2 tbsp Sesame seeds

Instructions:

  1. 1. Wash and prepare all vegetables. Cut them into bite-sized pieces.
  2. 2. Heat the sesame oil in a large skillet or wok over medium-high heat.
  3. 3. Add in the ginger and garlic, and stir for about 30 seconds until fragrant.
  4. 4. Add the vegetables into the wok, and stir fry for about 7-10 minutes until cooked but still crunchy.
  5. 5. In a separate bowl, combine the soy sauce, mirin, sriracha sauce and red chili flakes to create the dressing. Adjust the seasonings as per your preference for heat.
  6. 6. Pour this dressing over the stir-fry, and mix well to ensure all the vegetables are coated.
  7. 7. Cook for another 2-3 minutes, allowing the flavours to settle in.
  8. 8. Serve hot, garnished with the chopped scallions and sesame seeds.
