
Spicy Japanese Vegetable Stir Fry

Ingredients:
- 6 cups Fresh mixed vegetables - bell peppers, carrots, zucchini, bok choy, snap peas
- 2 tbsp Sesame oil
- 1 tbsp Fresh ginger, minced
- 2 cloves Garlic, minced
- ⅓ cup Soy sauce
- 1 tbsp Mirin
- 2 tbsp Sriracha sauce
- 1 tsp Red chili flakes
- 3 Scallions, chopped
- 2 tbsp Sesame seeds
Instructions:
- 1. Wash and prepare all vegetables. Cut them into bite-sized pieces.
- 2. Heat the sesame oil in a large skillet or wok over medium-high heat.
- 3. Add in the ginger and garlic, and stir for about 30 seconds until fragrant.
- 4. Add the vegetables into the wok, and stir fry for about 7-10 minutes until cooked but still crunchy.
- 5. In a separate bowl, combine the soy sauce, mirin, sriracha sauce and red chili flakes to create the dressing. Adjust the seasonings as per your preference for heat.
- 6. Pour this dressing over the stir-fry, and mix well to ensure all the vegetables are coated.
- 7. Cook for another 2-3 minutes, allowing the flavours to settle in.
- 8. Serve hot, garnished with the chopped scallions and sesame seeds.
