
Spicy Japanese Udon Stir Fry

Ingredients:
- 2 packets Udon noodles
- 2 tablespoons Sesame oil
- 2 cloves Garlic
- 1 teaspoon Red chili flakes
- 4 tablespoons Soy sauce
- 2 tablespoons Mirin
- 2 cups Vegetables (bell peppers, carrots)
- To taste Green onions for garnish
Instructions:
- 1. Cook the udon noodles according to the package instructions. Once done, drain and set aside.
- 2. Heat the sesame oil in a large pan over medium heat.
- 3. Add the minced garlic and red chili flakes to the pan and stir for a couple of minutes.
- 4. Add the sliced vegetables to the pan and stir fry for 5-7 minutes, or until they're tender.
- 5. Add the cooked udon noodles to the pan.
- 6. In a separate bowl, mix together the soy sauce and mirin. Pour this sauce over the noodles and vegetables in the pan, stirring to combine everything.
- 7. Continue to cook the stir fry for another couple of minutes, allowing the noodles to absorb some of the sauce.
- 8. Serve hot, garnished with green onions and additional red chili flakes if desired.
