Spicy Japanese Udon Stir Fry

Ingredients:

  • 2 packets Udon noodles
  • 2 tablespoons Sesame oil
  • 2 cloves Garlic
  • 1 teaspoon Red chili flakes
  • 4 tablespoons Soy sauce
  • 2 tablespoons Mirin
  • 2 cups Vegetables (bell peppers, carrots)
  • To taste Green onions for garnish

Instructions:

  1. 1. Cook the udon noodles according to the package instructions. Once done, drain and set aside.
  2. 2. Heat the sesame oil in a large pan over medium heat.
  3. 3. Add the minced garlic and red chili flakes to the pan and stir for a couple of minutes.
  4. 4. Add the sliced vegetables to the pan and stir fry for 5-7 minutes, or until they're tender.
  5. 5. Add the cooked udon noodles to the pan.
  6. 6. In a separate bowl, mix together the soy sauce and mirin. Pour this sauce over the noodles and vegetables in the pan, stirring to combine everything.
  7. 7. Continue to cook the stir fry for another couple of minutes, allowing the noodles to absorb some of the sauce.
  8. 8. Serve hot, garnished with green onions and additional red chili flakes if desired.
