Spicy Japanese Tamagoyaki

Ingredients:

  • 8 pieces Eggs
  • 1 tablespoon Soy sauce
  • 2 tablespoons Mirin
  • 1.5 tablespoons Sugar
  • 2 pieces Green onions
  • 2 pieces Fresh red chili peppers
  • 2 tablespoons Vegetable oil

Instructions:

  1. In a bowl, whisk the eggs together with the soy sauce, mirin, and sugar until thoroughly mixed.
  2. Finely chop the green onions and red chili peppers, then add them into the egg mixture and stir well.
  3. Heat the vegetable oil in a non-stick frying pan over medium heat.
  4. Pour a small amount of the egg mixture into the pan and spread it evenly. Once the bottom of the omelet is set but the top is still slightly liquid, start rolling it up from one side of the pan to the other.
  5. Once the omelet is rolled up, push it to the side of the pan and repeat the process with the remaining egg mixture, rolling it around the first rolled omelet.
  6. Continue this process until all the egg mixture is used up.
  7. Remove the omelet from the pan and let it cool before cutting it into slices.
  8. Serve the Spicy Japanese Tamagoyaki hot, accompanied by a bowl of rice and pickled vegetables if desired.
