Spicy Japanese Style Scrambled Eggs

Ingredients:

  • 4 units Eggs
  • 2 units Green Onions
  • 1 Tablespoon Chili Oil
  • 1 Tablespoon Soy Sauce
  • 1 Tablespoon Mirin
  • To taste Salt
  • To taste Pepper

Instructions:

  1. In a bowl, beat the eggs, soy sauce and mirin together.
  2. Slice the green onions into thin rings.
  3. Heat a pan with chili oil over medium heat.
  4. Add the green onions and sauté until slightly softened.
  5. Reduce the heat to low, then pour in the egg mixture, stirring constantly for creamy, soft curds.
  6. Season with salt and pepper as needed.
  7. Serve with warm rice and enjoy the spicy, flavorful Japanese style scrambled eggs for breakfast.
