Spicy Japanese Pork Skewers (Yakitori)

Ingredients:

  • 1 pound Pork belly
  • 0.5 cup Soy sauce
  • 0.5 cup Mirin
  • 2 tablespoons Sugar
  • 1 inch, grated Ginger
  • 2 cloves, minced Garlic cloves
  • 0.25 cup Sake
  • to taste Red pepper flakes
  • 6 stalks, chopped Green onion
  • 12 sticks Skewers

Instructions:

  1. Cut the pork belly into 1-inch cubes.
  2. In a mixing bowl, combine the soy sauce, mirin, sugar, grated ginger, minced garlic, sake, and red pepper flakes. Stir until the sugar is fully dissolved.
  3. Add the cut pork belly to the marinade and let it sit for at least 20 minutes, or ideally, refrigerate overnight.
  4. Preheat your grill on medium heat. While it’s heating, start skewering the pork. Aim for 4-6 pieces per skewer.
  5. Grill the skewers, regularly brushing them with the leftover marinade. Turn them every few minutes until they’re nice and charred, about 10 to 15 minutes.
  6. Garnish the skewers with green onions before serving.
