
Spicy Japanese Pork Skewers (Yakitori)

Ingredients:
- 1 pound Pork belly
- 0.5 cup Soy sauce
- 0.5 cup Mirin
- 2 tablespoons Sugar
- 1 inch, grated Ginger
- 2 cloves, minced Garlic cloves
- 0.25 cup Sake
- to taste Red pepper flakes
- 6 stalks, chopped Green onion
- 12 sticks Skewers
Instructions:
- Cut the pork belly into 1-inch cubes.
- In a mixing bowl, combine the soy sauce, mirin, sugar, grated ginger, minced garlic, sake, and red pepper flakes. Stir until the sugar is fully dissolved.
- Add the cut pork belly to the marinade and let it sit for at least 20 minutes, or ideally, refrigerate overnight.
- Preheat your grill on medium heat. While it’s heating, start skewering the pork. Aim for 4-6 pieces per skewer.
- Grill the skewers, regularly brushing them with the leftover marinade. Turn them every few minutes until they’re nice and charred, about 10 to 15 minutes.
- Garnish the skewers with green onions before serving.
