Spicy Japanese Onigiri

Ingredients:

  • 2 cups Sushi Rice
  • 2.5 cups Water
  • 4 Nori Sheets
  • 1 teaspoon Salt
  • 8 Pickled Umeboshi Plums
  • 2 teaspoons Japanese Seven Spice Powder (Shichimi Togarashi)

Instructions:

  1. Rinse the sushi rice in cold water until the water runs clear.
  2. In a pot, bring the sushi rice and water to a boil over high heat. Once boiling, lower the heat to a simmer and cover the pot. Let it simmer for 20 minutes.
  3. While waiting for the rice, cut the nori sheets into wide strips.
  4. When the rice is done, mix in the salt while it's still hot.
  5. Let the rice cool down to a manageable temperature and dampen your hands with water. Take a bit of rice and flatten it on your hand.
  6. Place an umeboshi plum in the middle, and sprinkle it with the seven spice powder to your taste.
  7. Shape the rice around the plum into a triangle, and wrap it up with a strip of nori.
  8. Repeat with the rest of the rice and ingredients.
  9. Serve and enjoy!
