
Spicy Japanese Onigiri

Ingredients:
- 2 cups Sushi Rice
- 2.5 cups Water
- 4 Nori Sheets
- 1 teaspoon Salt
- 8 Pickled Umeboshi Plums
- 2 teaspoons Japanese Seven Spice Powder (Shichimi Togarashi)
Instructions:
- Rinse the sushi rice in cold water until the water runs clear.
- In a pot, bring the sushi rice and water to a boil over high heat. Once boiling, lower the heat to a simmer and cover the pot. Let it simmer for 20 minutes.
- While waiting for the rice, cut the nori sheets into wide strips.
- When the rice is done, mix in the salt while it's still hot.
- Let the rice cool down to a manageable temperature and dampen your hands with water. Take a bit of rice and flatten it on your hand.
- Place an umeboshi plum in the middle, and sprinkle it with the seven spice powder to your taste.
- Shape the rice around the plum into a triangle, and wrap it up with a strip of nori.
- Repeat with the rest of the rice and ingredients.
- Serve and enjoy!
