Spicy Japanese Midnight Rice

Ingredients:

  • 1 cup Japanese Short Grain Rice
  • 1.5 cups Water
  • 2 tablespoons Soy Sauce
  • 1 tablespoon Sriracha Sauce
  • 2 cloves Garlic Cloves
  • 2 stalks Green Onions
  • 1 tablespoon Sesame Oil
  • 2 pieces Egg

Instructions:

  1. Wash the Japanese short grain rice until the water runs clear.
  2. In a medium saucepan, combine the rice and water. Bring to a boil over medium heat. Once boiling, reduce the heat to low, cover and let simmer for about 20 minutes.
  3. While the rice is cooking, mince the garlic cloves and slice the green onions.
  4. Heat the sesame oil in a pan over medium heat. Add the minced garlic and stir fry until fragrant.
  5. Add the cooked rice to the pan and stir fry for a few minutes until it's slightly crispy.
  6. Push the rice to one side of the pan and crack the eggs into the other side. Scramble the eggs until they're fully cooked and mix them into the rice.
  7. Add the soy sauce and sriracha sauce to the pan. Stir well to combine and ensure the rice is well-coated.
  8. Garnish with the sliced green onions and serve hot.
