
Spicy Japanese Fruit Curry

Ingredients:
- 2 cups mixed fruit (apples, pears, grapes, etc)
- 1 medium onion
- 2 teaspoons curry powder
- 0.5 teaspoon crushed red pepper flakes
- 2 cloves garlic cloves
- 1 tablespoon honey
- 1 can coconut milk
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 4 servings cooked rice
Instructions:
- Heat the olive oil in a pan over medium heat. Add the sliced onions and cook for about 5 minutes, until they are soft and begin to caramelize.
- Add the garlic and cook until fragrant. Add the curry powder and red pepper flakes and stir well until the onions are coated.
- Add the mixed fruit and cook for a few minutes until they begin to soften. Add the honey and soy sauce and stir well.
- Add the coconut milk and reduce the heat to low. Let the curry simmer for about 30 minutes, allowing the flavors to meld together.
- Serve the curry over cooked rice and enjoy.
