Spicy Japanese Fruit Curry

Ingredients:

  • 2 cups mixed fruit (apples, pears, grapes, etc)
  • 1 medium onion
  • 2 teaspoons curry powder
  • 0.5 teaspoon crushed red pepper flakes
  • 2 cloves garlic cloves
  • 1 tablespoon honey
  • 1 can coconut milk
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 4 servings cooked rice

Instructions:

  1. Heat the olive oil in a pan over medium heat. Add the sliced onions and cook for about 5 minutes, until they are soft and begin to caramelize.
  2. Add the garlic and cook until fragrant. Add the curry powder and red pepper flakes and stir well until the onions are coated.
  3. Add the mixed fruit and cook for a few minutes until they begin to soften. Add the honey and soy sauce and stir well.
  4. Add the coconut milk and reduce the heat to low. Let the curry simmer for about 30 minutes, allowing the flavors to meld together.
  5. Serve the curry over cooked rice and enjoy.
