Ingredients:

  • 2 tablespoons Olive Oil
  • 2 cloves Garlic
  • 1 teaspoon Red Chili Flakes
  • 1 medium Bell Pepper
  • 2 medium Carrot
  • 2 medium Zucchini
  • 1 medium Eggplant
  • 2 teaspoons Italian Seasoning
  • To taste Salt
  • To taste Black Pepper
  • For garnish Parmesan Cheese

Instructions:

  1. 1. In a large pan, heat the olive oil over medium-high heat.
  2. 2. Add the minced garlic and red chili flakes. Stir until fragrant.
  3. 3. Add the bell peppers, carrots, zucchini, and eggplant to the pan. Stir to coat the vegetables in the oil and spices.
  4. 4. Cover the pan and let the vegetables cook for about 10 minutes, until they are softened and starting to brown.
  5. 5. Add the Italian seasoning, salt, and black pepper. Stir to combine.
  6. 6. Serve the stir-fry hot, garnished with a sprinkle of parmesan cheese.
