Ingredients:
- 2 tablespoons Olive Oil
- 2 cloves Garlic
- 1 teaspoon Red Chili Flakes
- 1 medium Bell Pepper
- 2 medium Carrot
- 2 medium Zucchini
- 1 medium Eggplant
- 2 teaspoons Italian Seasoning
- To taste Salt
- To taste Black Pepper
- For garnish Parmesan Cheese
Instructions:
- 1. In a large pan, heat the olive oil over medium-high heat.
- 2. Add the minced garlic and red chili flakes. Stir until fragrant.
- 3. Add the bell peppers, carrots, zucchini, and eggplant to the pan. Stir to coat the vegetables in the oil and spices.
- 4. Cover the pan and let the vegetables cook for about 10 minutes, until they are softened and starting to brown.
- 5. Add the Italian seasoning, salt, and black pepper. Stir to combine.
- 6. Serve the stir-fry hot, garnished with a sprinkle of parmesan cheese.
