Spicy Italian Vegetable Stir-fry

Ingredients:

  • 2 tablespoons Olive Oil
  • 3 cloves Garlic
  • 1 teaspoon Red Pepper Flakes
  • 2 whole Zucchini
  • 1 whole Red Bell Pepper
  • 1 whole Yellow Bell Pepper
  • 1 medium-sized Eggplant
  • 1 cup Cherry Tomatoes
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • To taste Teaspoon Fresh Basil

Instructions:

  1. 1. Heat the olive oil in a large skillet over medium heat. Add the garlic and red pepper flakes. Cook until fragrant, about 1 minute.
  2. 2. Add the zucchini, bell peppers, and eggplant to the skillet. Stir to combine with the garlic and red pepper flakes. Cook until the vegetables are tender, about 10 minutes.
  3. 3. Add the cherry tomatoes to the skillet. Stir to combine and cook until the tomatoes are just starting to soften, about 2 minutes.
  4. 4. Season with salt and pepper. Stir to combine.
  5. 5. Remove from heat and stir in the fresh basil. Serve.
