
Spicy Italian Vegetable Stir-fry

Ingredients:
- 2 tablespoons Olive Oil
- 3 cloves Garlic
- 1 teaspoon Red Pepper Flakes
- 2 whole Zucchini
- 1 whole Red Bell Pepper
- 1 whole Yellow Bell Pepper
- 1 medium-sized Eggplant
- 1 cup Cherry Tomatoes
- 0.5 teaspoon Salt
- 0.5 teaspoon Black Pepper
- To taste Teaspoon Fresh Basil
Instructions:
- 1. Heat the olive oil in a large skillet over medium heat. Add the garlic and red pepper flakes. Cook until fragrant, about 1 minute.
- 2. Add the zucchini, bell peppers, and eggplant to the skillet. Stir to combine with the garlic and red pepper flakes. Cook until the vegetables are tender, about 10 minutes.
- 3. Add the cherry tomatoes to the skillet. Stir to combine and cook until the tomatoes are just starting to soften, about 2 minutes.
- 4. Season with salt and pepper. Stir to combine.
- 5. Remove from heat and stir in the fresh basil. Serve.
