
Spicy Italian Vegetable Frittata

Ingredients:
- 2 tbsp Olive oil
- 1 pcs Red bell pepper
- 1 pcs Zucchini
- 2 pcs Garlic cloves
- 1/2 tsp Red chilli flakes
- 8 pcs Eggs
- 1/2 cup Grated Parmesan cheese
- 1/4 cup Chopped fresh basil
- To taste Salt
- To taste Pepper
Instructions:
- Preheat your oven to 375°F (190°C).
- In a large, oven-safe frying pan, heat the olive oil over medium heat. Add the red bell pepper and zucchini and cook until they begin to soften, about 5 minutes.
- Add the garlic and red chili flakes to the pan and cook for another minute.
- In a large bowl, whisk together the eggs, Parmesan, basil, salt, and pepper.
- Pour the egg mixture over the vegetables in the pan, stirring gently to distribute the eggs.
- Put the pan in the preheated oven and bake for 20 minutes, or until the frittata is set and slightly golden on top.
- Allow the frittata to cool for a few minutes before cutting it into wedges and serving.
