Spicy Italian Vegetable Frittata

Ingredients:

  • 2 tbsp Olive oil
  • 1 pcs Red bell pepper
  • 1 pcs Zucchini
  • 2 pcs Garlic cloves
  • 1/2 tsp Red chilli flakes
  • 8 pcs Eggs
  • 1/2 cup Grated Parmesan cheese
  • 1/4 cup Chopped fresh basil
  • To taste Salt
  • To taste Pepper

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large, oven-safe frying pan, heat the olive oil over medium heat. Add the red bell pepper and zucchini and cook until they begin to soften, about 5 minutes.
  3. Add the garlic and red chili flakes to the pan and cook for another minute.
  4. In a large bowl, whisk together the eggs, Parmesan, basil, salt, and pepper.
  5. Pour the egg mixture over the vegetables in the pan, stirring gently to distribute the eggs.
  6. Put the pan in the preheated oven and bake for 20 minutes, or until the frittata is set and slightly golden on top.
  7. Allow the frittata to cool for a few minutes before cutting it into wedges and serving.
