
Spicy Italian Seafood Bruschetta

Ingredients:
- 1 loaf Sourdough bread
- to taste Olive oil
- 2 Garlic cloves
- 2 cups Cherry tomatoes
- 2 cups Mixed seafood (shrimp, squid, and mussels)
- 1 teaspoon Red chili flakes
- to taste Salt
- to taste Black pepper
- for garnish Parsley
Instructions:
- Preheat the oven to 375°F (190°C). Cut the sourdough bread into 1 inch slices and drizzle them with olive oil on both sides. Place on a baking sheet.
- Toast the bread in the oven for about five minutes, or until it gets crispy. Remove from the oven and while it's still warm, rub a clove of garlic on the surface of each slice.
- In a pan, heat some olive oil over medium heat. Add the seafood and cook until it's just done, for about two minutes. Remove from the pan and set aside.
- In the same pan, add the finely chopped garlic and red chili flakes. Fry until the garlic is golden brown.
- Add in the cherry tomatoes and cook for another two minutes until they start to blister. Season with salt and pepper.
- Return the cooked seafood to the pan and toss everything together. Remove from heat.
- Spoon the seafood mixture over the toasted bread slices. Garnish with fresh parsley and serve immediately.
