Spicy Italian Risotto

Ingredients:

  • 2 cups Arborio rice
  • 2 tablespoons Olive oil
  • 2 cloves Garlic
  • 1 pieces Onion
  • 1 teaspoon Red pepper flakes
  • 1/2 cup White wine
  • 6 cups Chicken broth
  • 3/4 cup Parmesan cheese
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Pepper
  • 2 tablespoons Butter

Instructions:

  1. In a large saucepan over medium heat, add olive oil. Then add the onions and garlic, sautéing until they are soft and translucent.
  2. Stir in the red pepper flakes and Arborio rice and cook for 2 minutes.
  3. Pour in the white wine, stirring continuously, until the liquid is fully absorbed.
  4. Add 1 cup of chicken broth to the rice, and stir until the broth is absorbed. Continue adding broth one cup at a time, stirring continuously, until the liquid is absorbed and the rice is creamy and al dente. This will take about 20 minutes.
  5. Remove from heat, and stir in the butter, parmesan cheese, salt and pepper, stirring until the cheese and butter are melted into the risotto.
  6. Serve hot, and enjoy your spicy Italian risotto!
