
Spicy Italian Pork and Egg Breakfast Skillet

Ingredients:
- 2 tablespoons Olive oil
- 4 Italian pork sausages
- 1 Garlic clove, minced
- 1 teaspoon Red chili flakes
- 1 cup Canned diced tomatoes
- 4 Eggs
- to taste Salt and pepper
- a handful Fresh basil leaves
- for garnish Grated Parmesan cheese
Instructions:
- 1. Heat the olive oil in a large skillet over medium-high heat. Add the sausages and cook until browned, about 5 minutes on each side. Remove from pan and set aside.
- 2. In the same skillet, add the garlic and red chili flakes. Cook for 1-2 minutes until fragrant.
- 3. Cut the cooked sausages into slices and add them back into the skillet. Add the diced tomatoes and bring to a simmer.
- 4. Make four wells in the simmering mixture with a spoon. Break an egg into each well, then cover the skillet and let cook undisturbed for about 5-7 minutes, or until the eggs are cooked to your desired doneness.
- 5. Season with salt and pepper, then sprinkle on the basil leaves and Parmesan cheese. Serve hot and enjoy your spicy Italian pork and egg breakfast skillet!
