Spicy Italian Pork and Egg Breakfast Skillet

Ingredients:

  • 2 tablespoons Olive oil
  • 4 Italian pork sausages
  • 1 Garlic clove, minced
  • 1 teaspoon Red chili flakes
  • 1 cup Canned diced tomatoes
  • 4 Eggs
  • to taste Salt and pepper
  • a handful Fresh basil leaves
  • for garnish Grated Parmesan cheese

Instructions:

  1. 1. Heat the olive oil in a large skillet over medium-high heat. Add the sausages and cook until browned, about 5 minutes on each side. Remove from pan and set aside.
  2. 2. In the same skillet, add the garlic and red chili flakes. Cook for 1-2 minutes until fragrant.
  3. 3. Cut the cooked sausages into slices and add them back into the skillet. Add the diced tomatoes and bring to a simmer.
  4. 4. Make four wells in the simmering mixture with a spoon. Break an egg into each well, then cover the skillet and let cook undisturbed for about 5-7 minutes, or until the eggs are cooked to your desired doneness.
  5. 5. Season with salt and pepper, then sprinkle on the basil leaves and Parmesan cheese. Serve hot and enjoy your spicy Italian pork and egg breakfast skillet!
