
Spicy Italian Frittata

Ingredients:
- 8 none Eggs
- 3 tablespoon Olive Oil
- 1 cup none Cherry Tomatoes
- 1 none Red Onion
- 2 cups none Spinach
- 1 cup none Parmesan Cheese
- 1/2 pound none Spicy Italian Sausage
- 1 teaspoon none Crushed Red Pepper Flakes
- to taste none Salt
- to taste none Black Pepper
Instructions:
- Preheat the oven to 375 degrees Fahrenheit.
- In a large, oven-safe skillet, heat the olive oil over medium heat. Add the onion and cook until it's softened and translucent.
- Add the spicy Italian sausage and cook, breaking it up with a spoon, until browned. Stir in the red pepper flakes.
- Add the cherry tomatoes and spinach, cooking until the spinach has wilted down.
- In a separate bowl, whisk together the eggs, salt, and pepper. Pour the egg mixture over the sausage and vegetables in the skillet.
- Sprinkle the Parmesan cheese over the top, then transfer the skillet to the preheated oven.
- Bake for about 12-15 minutes, or until the frittata is set in the middle and the cheese is golden and bubbly.
- Remove from oven and let cool for a few minutes before slicing into pieces. Serve hot and enjoy your spicy Italian snack!
