
Spicy Italian Egg Pasta

Ingredients:
- 500 grams Spaghetti
- 2 tablespoons Olive oil
- 4 cloves Garlic
- 1 teaspoon Red pepper flakes
- 4 large Eggs
- 1 cup Parmesan cheese
- 1/2 cup Freshly chopped parsley
- to taste Salt
- to taste Black pepper
Instructions:
- In a large pot, boil the spaghetti until it is al dente. Drain, reserving 1 cup of pasta water.
- In a large sauté pan, heat the olive oil over medium heat.
- Add the garlic to the pan and sauté until fragrant.
- Add the red pepper flakes to the pan and sauté for another 1-2 minutes.
- In a separate bowl, whisk together the eggs, parmesan, salt, and pepper. Slowly add 1/2 a cup of the reserved pasta water and continue to whisk.
- Take the sauté pan off the heat and slowly pour in the egg mixture, stirring continuously.
- Add the cooked spaghetti to the pan and toss until fully coated in the egg mixture. If it's too dry, add more pasta water.
- Serve immediately with a sprinkle of freshly chopped parsley on top.
