Spicy Italian Egg Pasta

Ingredients:

  • 500 grams Spaghetti
  • 2 tablespoons Olive oil
  • 4 cloves Garlic
  • 1 teaspoon Red pepper flakes
  • 4 large Eggs
  • 1 cup Parmesan cheese
  • 1/2 cup Freshly chopped parsley
  • to taste Salt
  • to taste Black pepper

Instructions:

  1. In a large pot, boil the spaghetti until it is al dente. Drain, reserving 1 cup of pasta water.
  2. In a large sauté pan, heat the olive oil over medium heat.
  3. Add the garlic to the pan and sauté until fragrant.
  4. Add the red pepper flakes to the pan and sauté for another 1-2 minutes.
  5. In a separate bowl, whisk together the eggs, parmesan, salt, and pepper. Slowly add 1/2 a cup of the reserved pasta water and continue to whisk.
  6. Take the sauté pan off the heat and slowly pour in the egg mixture, stirring continuously.
  7. Add the cooked spaghetti to the pan and toss until fully coated in the egg mixture. If it's too dry, add more pasta water.
  8. Serve immediately with a sprinkle of freshly chopped parsley on top.
