
Spicy Italian Egg Frittata

Ingredients:
- 6 large Eggs
- 2 tablespoons Olive oil
- 1 small, finely chopped Red onion
- 2 minced Garlic cloves
- 1 teaspoon Red chili flakes
- 1 cup, cooked and crumbled Italian sausage
- 1 bunch, roughly chopped Fresh basil leaves
- 1 cup, shredded Mozzarella cheese
- to taste Salt
- to taste Black pepper
Instructions:
- Preheat the oven to 350 degrees F (175 degrees C).
- In a large bowl, whisk together the eggs, salt, and black pepper. Set aside.
- Heat the olive oil in a 10-inch oven-safe skillet over medium heat. Add the onion, garlic, and red chili flakes and cook until the onion is translucent.
- Add the cooked sausage to the skillet and stir to combine.
- Slowly pour the egg mixture into the skillet. Sprinkle the chopped basil and shredded mozzarella over the top.
- Transfer the skillet to the preheated oven and bake for 12-15 minutes, or until the frittata is set and the cheese is bubbly and golden.
- Let the frittata cool for a few minutes before cutting into wedges. Serve warm with extra basil and a sprinkle of red chili flakes, if desired.
