Spicy Italian Egg Frittata

Ingredients:

  • 6 large Eggs
  • 2 tablespoons Olive oil
  • 1 small, finely chopped Red onion
  • 2 minced Garlic cloves
  • 1 teaspoon Red chili flakes
  • 1 cup, cooked and crumbled Italian sausage
  • 1 bunch, roughly chopped Fresh basil leaves
  • 1 cup, shredded Mozzarella cheese
  • to taste Salt
  • to taste Black pepper

Instructions:

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. In a large bowl, whisk together the eggs, salt, and black pepper. Set aside.
  3. Heat the olive oil in a 10-inch oven-safe skillet over medium heat. Add the onion, garlic, and red chili flakes and cook until the onion is translucent.
  4. Add the cooked sausage to the skillet and stir to combine.
  5. Slowly pour the egg mixture into the skillet. Sprinkle the chopped basil and shredded mozzarella over the top.
  6. Transfer the skillet to the preheated oven and bake for 12-15 minutes, or until the frittata is set and the cheese is bubbly and golden.
  7. Let the frittata cool for a few minutes before cutting into wedges. Serve warm with extra basil and a sprinkle of red chili flakes, if desired.
