Spicy Italian Chicken Frittata

Ingredients:

  • 2 pieces Chicken Breast
  • 6 pieces Large Eggs
  • 2 tablespoons Olive Oil
  • 3 pieces Garlic Cloves
  • 1 bunch Fresh Italian Parsley
  • 1 teaspoon Chilli Flakes
  • to taste Salt
  • to taste Black Pepper
  • 1 cup Low-fat Mozzarella Cheese

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Cook the chicken breast in a pan over medium heat until it's no longer pink in the middle (about 7-8 minutes each side). Then cut it into small pieces.
  3. In a large bowl, whisk together the eggs, chilli flakes, salt, pepper, and half the parsley.
  4. In a large oven-safe skillet, heat the olive oil over medium heat. Add the garlic and cook until fragrant, about 1 minute.
  5. Add the chicken pieces to the skillet and stir to combine.
  6. Pour the egg mixture over the chicken in the skillet, ensuring it is evenly distributed. Cook for about 5 minutes, until the edges start to set.
  7. Sprinkle the low-fat mozzarella cheese over the top of the egg mixture.
  8. Place the skillet in the preheated oven and bake for about 15-20 minutes, until the cheese is bubbly and golden brown.
  9. Remove from the oven and sprinkle with the remaining parsley before serving.
