
Spicy Italian Chicken Frittata

Ingredients:
- 2 pieces Chicken Breast
- 6 pieces Large Eggs
- 2 tablespoons Olive Oil
- 3 pieces Garlic Cloves
- 1 bunch Fresh Italian Parsley
- 1 teaspoon Chilli Flakes
- to taste Salt
- to taste Black Pepper
- 1 cup Low-fat Mozzarella Cheese
Instructions:
- Preheat the oven to 375°F (190°C).
- Cook the chicken breast in a pan over medium heat until it's no longer pink in the middle (about 7-8 minutes each side). Then cut it into small pieces.
- In a large bowl, whisk together the eggs, chilli flakes, salt, pepper, and half the parsley.
- In a large oven-safe skillet, heat the olive oil over medium heat. Add the garlic and cook until fragrant, about 1 minute.
- Add the chicken pieces to the skillet and stir to combine.
- Pour the egg mixture over the chicken in the skillet, ensuring it is evenly distributed. Cook for about 5 minutes, until the edges start to set.
- Sprinkle the low-fat mozzarella cheese over the top of the egg mixture.
- Place the skillet in the preheated oven and bake for about 15-20 minutes, until the cheese is bubbly and golden brown.
- Remove from the oven and sprinkle with the remaining parsley before serving.
