Spicy Italian Chicken Breakfast Bake

Ingredients:

  • 4 pieces boneless, skinless chicken breasts
  • 2 teaspoons Italian seasoning
  • 1 teaspoon crushed red pepper
  • 2 tablespoons olive oil
  • 2 numbers tomatoes
  • 1 number green bell pepper
  • 8 numbers eggs
  • to taste salt
  • to taste black pepper

Instructions:

  1. Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius).
  2. Rub the chicken breasts with the Italian seasoning, crushed red pepper, salt, pepper, and one tablespoon of the oil. Place them on a baking dish.
  3. Chop the tomatoes and green bell pepper. Scatter them around the chicken in the baking dish.
  4. Roast the chicken and vegetables in the oven for about 20-25 minutes, until the chicken is cooked through and the vegetables are tender.
  5. While the chicken is cooking, beat the eggs in a bowl.
  6. Once the chicken is cooked, pour the beaten eggs over the chicken and vegetables, making sure to cover all the ingredients evenly.
  7. Place the baking dish back in the oven and bake for another 15-20 minutes, until the eggs are set.
  8. Remove the baking dish from the oven and let it rest for a few minutes before serving.
