
Spicy Italian Chicken Breakfast Bake

Ingredients:
- 4 pieces boneless, skinless chicken breasts
- 2 teaspoons Italian seasoning
- 1 teaspoon crushed red pepper
- 2 tablespoons olive oil
- 2 numbers tomatoes
- 1 number green bell pepper
- 8 numbers eggs
- to taste salt
- to taste black pepper
Instructions:
- Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius).
- Rub the chicken breasts with the Italian seasoning, crushed red pepper, salt, pepper, and one tablespoon of the oil. Place them on a baking dish.
- Chop the tomatoes and green bell pepper. Scatter them around the chicken in the baking dish.
- Roast the chicken and vegetables in the oven for about 20-25 minutes, until the chicken is cooked through and the vegetables are tender.
- While the chicken is cooking, beat the eggs in a bowl.
- Once the chicken is cooked, pour the beaten eggs over the chicken and vegetables, making sure to cover all the ingredients evenly.
- Place the baking dish back in the oven and bake for another 15-20 minutes, until the eggs are set.
- Remove the baking dish from the oven and let it rest for a few minutes before serving.
