Spicy Italian Breakfast Frittata

Ingredients:

  • 8 none Eggs
  • 0.5 cup Parmesan cheese
  • 8 ounces Italian sausage
  • 1 small Red bell pepper
  • 1 small Onion
  • 1 tsp Crushed red pepper flakes
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 1 tbsp Olive oil

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. In a large oven-safe skillet, heat the olive oil over medium heat. Add the Italian sausage and cook until browned, about 5 minutes.
  3. Add the onion and red bell pepper to the skillet and cook until softened, about 5 minutes.
  4. In a large bowl, beat the eggs. Add the Parmesan cheese, salt, black pepper and crushed red pepper flakes and stir to combine.
  5. Pour the egg mixture over the sausage and vegetables in the skillet. Stir gently to make sure the ingredients are evenly distributed.
  6. Transfer the skillet to the oven and bake for 15 minutes, or until the frittata is set and golden brown.
  7. Remove the frittata from the oven and let it rest for a couple of minutes before cutting it into wedges and serving.
