
Spicy Italian Breakfast Bruschetta

Ingredients:
- 1 loaf Italian bread
- 1/4 cup olive oil
- 2 cups cherry tomatoes
- 4 garlic cloves
- 1/2 cup fresh basil leaves
- 2 cups fresh mozzarella
- 2 teaspoons crushed red pepper flakes
- to taste salt
Instructions:
- Preheat the oven to 375 degrees F (190 degrees C).
- Slice the Italian bread into 1 inch thick pieces and arrange on a baking sheet.
- Brush each slice of bread with olive oil.
- Bake in the preheated oven for 10 minutes, or until the tops are golden and crispy.
- While the bread is toasting, finely chop the cherry tomatoes and garlic. Tear the basil leaves into small pieces.
- In a bowl, combine the chopped tomatoes, garlic, basil, crushed red pepper flakes, and a pinch of salt. Mix well.
- Top each toasted bread slice with a generous amount of the tomato mixture. Sprinkle fresh mozzarella on top.
- Return the bruschetta to the oven and broil for 5 minutes, or until the cheese is melted and bubbly.
