Spicy Italian Breakfast Bruschetta

Ingredients:

  • 1 loaf Italian bread
  • 1/4 cup olive oil
  • 2 cups cherry tomatoes
  • 4 garlic cloves
  • 1/2 cup fresh basil leaves
  • 2 cups fresh mozzarella
  • 2 teaspoons crushed red pepper flakes
  • to taste salt

Instructions:

  1. Preheat the oven to 375 degrees F (190 degrees C).
  2. Slice the Italian bread into 1 inch thick pieces and arrange on a baking sheet.
  3. Brush each slice of bread with olive oil.
  4. Bake in the preheated oven for 10 minutes, or until the tops are golden and crispy.
  5. While the bread is toasting, finely chop the cherry tomatoes and garlic. Tear the basil leaves into small pieces.
  6. In a bowl, combine the chopped tomatoes, garlic, basil, crushed red pepper flakes, and a pinch of salt. Mix well.
  7. Top each toasted bread slice with a generous amount of the tomato mixture. Sprinkle fresh mozzarella on top.
  8. Return the bruschetta to the oven and broil for 5 minutes, or until the cheese is melted and bubbly.
