
Spicy Italian Baked Chicken with Fresh Tomatoes

Ingredients:
- 4 pcs Boneless skinless chicken breasts
- 2 tablespoons Extra virgin olive oil
- 4 pcs Fresh tomatoes
- 2 cloves Garlic
- 1 tablespoon Italian seasoning
- 1 teaspoon Red chili flakes
- to taste Salt and freshly ground pepper
Instructions:
- Preheat the oven to 375 degrees F (190 degrees C).
- Rub the chicken breasts with olive oil and season with salt, pepper, Italian seasoning, and red chili flakes.
- Arrange the chicken in a baking dish and surround with chopped fresh tomatoes and minced garlic.
- Bake in the preheated oven until chicken is no longer pink in the center and the juices run clear, about 45 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
- Allow it to rest for 5 minutes before serving, this will help the chicken to reabsorb the juices for a moister chicken.
