Spicy Italian Baked Chicken Breakfast Casserole

Ingredients:

  • 2 whole Boneless, skinless chicken breasts
  • 6 whole Eggs
  • 1 cup Chopped red bell pepper
  • 2 cups Spaghetti sauce
  • 2 tablespoons Olive oil
  • 1 cup Chopped onion
  • 2 each Garlic cloves, minced
  • 2 teaspoons Italian seasoning
  • 1 teaspoon Crushed red pepper flakes
  • to taste Salt
  • to taste Black pepper

Instructions:

  1. Preheat your oven to 375 degrees Fahrenheit.
  2. In a large skillet, heat the olive oil over medium heat. Add the onion, bell pepper, and garlic, cooking until softened.
  3. Cut the chicken into bite-sized pieces and add to the skillet. Season with the Italian seasoning, red pepper flakes, salt, and black pepper. Cook until the chicken is no longer pink in the center.
  4. In a large bowl, whisk the eggs. Stir in the spaghetti sauce.
  5. Transfer the chicken and vegetables to a baking dish. Pour the egg mixture over top, ensuring the ingredients are evenly distributed.
  6. Bake for 45 minutes, or until the eggs are set and the top is slightly browned.
  7. Allow the casserole to cool for a few minutes before cutting and serving.
