
Spicy Italian Baked Chicken Breakfast Casserole

Ingredients:
- 2 whole Boneless, skinless chicken breasts
- 6 whole Eggs
- 1 cup Chopped red bell pepper
- 2 cups Spaghetti sauce
- 2 tablespoons Olive oil
- 1 cup Chopped onion
- 2 each Garlic cloves, minced
- 2 teaspoons Italian seasoning
- 1 teaspoon Crushed red pepper flakes
- to taste Salt
- to taste Black pepper
Instructions:
- Preheat your oven to 375 degrees Fahrenheit.
- In a large skillet, heat the olive oil over medium heat. Add the onion, bell pepper, and garlic, cooking until softened.
- Cut the chicken into bite-sized pieces and add to the skillet. Season with the Italian seasoning, red pepper flakes, salt, and black pepper. Cook until the chicken is no longer pink in the center.
- In a large bowl, whisk the eggs. Stir in the spaghetti sauce.
- Transfer the chicken and vegetables to a baking dish. Pour the egg mixture over top, ensuring the ingredients are evenly distributed.
- Bake for 45 minutes, or until the eggs are set and the top is slightly browned.
- Allow the casserole to cool for a few minutes before cutting and serving.
