Spicy Indian Vegetable Curry

Ingredients:
- 2 tablespoons Oil
- 1 large Onion
- 3 cloves Garlic
- 1 inch Fresh ginger
- 1 teaspoon Turmeric
- 1 teaspoon Cumin seeds
- 2 teaspoons Garam masala
- 1 teaspoon Red chili powder
- 4 cups Assorted vegetables (broccoli, bell peppers, carrots)
- 2 medium Tomatoes
- 400 milliliters Coconut milk
- to taste Salt
Instructions:
- Heat the oil in a pan, add the onion and cook until it becomes translucent.
- Add the minced garlic and ginger to the pan and cook for a few more minutes.
- Add the turmeric, cumin seeds, garam masala, and red chili powder to the pan and stir well.
- Chop the vegetables and add them to the pan. Stir well to ensure they are evenly coated with the spices.
- Chop the tomatoes and add them to the pan, along with the coconut milk and salt.
- Cover the pan and let it simmer for around 20-30 minutes, until the vegetables are cooked.
- Adjust the seasoning if necessary, then serve the curry with Indian bread or rice.
