
Spicy Indian-Style Scrambled Eggs (Egg Bhurji)

Ingredients:
- 4 whole Eggs
- 1 large Onion
- 1 large Tomato
- 2 piece Green chilies
- 2 piece Garlic cloves
- 1 small bunch Coriander leaves
- 1 teaspoon Cumin seeds
- 1/2 teaspoon Turmeric powder
- 1/2 teaspoon Red chilli powder
- to taste Salt
- 1 tablespoon Oil
Instructions:
- Heat oil in a pan, add cumin seeds and let them splutter.
- Add chopped green chilies and garlic to the pan and sauté for a minute.
- Add finely chopped onions and cook until they become soft and translucent.
- Now, add chopped tomatoes along with turmeric powder, red chili powder, and salt.
- Cook until tomatoes become mushy and the spices are well blended.
- In a separate bowl, beat the eggs till frothy and add this to the pan.
- Stir continuously and scramble the eggs on low flame until they are fully cooked.
- Finally, sprinkle finely chopped coriander leaves and mix well.
- Serve hot with bread or flat Indian bread like roti or naan.
