Spicy Indian-Style Scrambled Eggs (Egg Bhurji)

Ingredients:

  • 4 whole Eggs
  • 1 large Onion
  • 1 large Tomato
  • 2 piece Green chilies
  • 2 piece Garlic cloves
  • 1 small bunch Coriander leaves
  • 1 teaspoon Cumin seeds
  • 1/2 teaspoon Turmeric powder
  • 1/2 teaspoon Red chilli powder
  • to taste Salt
  • 1 tablespoon Oil

Instructions:

  1. Heat oil in a pan, add cumin seeds and let them splutter.
  2. Add chopped green chilies and garlic to the pan and sauté for a minute.
  3. Add finely chopped onions and cook until they become soft and translucent.
  4. Now, add chopped tomatoes along with turmeric powder, red chili powder, and salt.
  5. Cook until tomatoes become mushy and the spices are well blended.
  6. In a separate bowl, beat the eggs till frothy and add this to the pan.
  7. Stir continuously and scramble the eggs on low flame until they are fully cooked.
  8. Finally, sprinkle finely chopped coriander leaves and mix well.
  9. Serve hot with bread or flat Indian bread like roti or naan.
