
Spicy Indian Seafood Curry

Ingredients:
- 500 grams seafood mix (prawns, squid, mussels)
- 1 piece onion
- 2 pieces garlic cloves
- 1 inch piece fresh ginger
- 1 piece green chili
- 10 leaves curry leaves
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon coriander powder
- 2 cups coconut milk
- 1 tablespoon lemon juice
- to taste salt
- a few leaves coriander leaves for garnish
- 2 tablespoons vegetable oil
Instructions:
- Heat the oil in a large pan over medium heat. Add the onion, garlic, ginger, and green chili. Fry until the onion becomes translucent.
- Add the curry leaves, turmeric powder, red chili powder, and coriander powder. Stir well.
- Add the seafood mix to the pan and toss to coat in the spices. Cook for about 5 minutes, until the seafood is half-cooked.
- Pour in the coconut milk and bring to a simmer. Cook for another 10-15 minutes, until the seafood is cooked through and the sauce has thickened.
- Add the lemon juice and salt to taste. Stir well, then remove from heat.
- Garnish with fresh coriander leaves before serving. Serve hot with steamed rice or Indian bread.
