Spicy Indian Pork Vindaloo

Ingredients:
- 1.5 pounds Pork shoulder
- 3 tablespoons Vinegar
- 6 cloves Garlic
- 1 tablespoon Ginger
- 2 Hot red chili pepper
- 2 teaspoons Ground coriander
- 2 teaspoons Ground cumin
- 1 teaspoon Turmeric
- 1 teaspoon Ground black pepper
- 2 tablespoons Vegetable oil
- 2 medium, sliced Onions
- 1.5 cups, chopped Tomatoes
- 1 cup Water
- to taste Salt
Instructions:
- In a bowl, combine the pork, vinegar, minced garlic, minced ginger, red chili pepper, coriander, cumin, turmeric, and black pepper. Let it marinate for at least 15 minutes, but up to overnight in the refrigerator for best flavor.
- Heat the oil in a large skillet over medium heat. Add the onions, and cook until they are browned. This should take about 10 minutes.
- Add the tomatoes, and cook for an additional 5 minutes.
- Add the pork and its marinade to the skillet. Cook for about 10 minutes, stirring frequently to keep the spices from sticking to the bottom of the skillet.
- Add water and salt to taste. Bring the mixture to a boil. Once it's boiling, reduce the heat to low, cover the skillet, and let it simmer. It should cook for about one hour, or until the pork is tender.
- Serve the Spicy Indian Pork Vindaloo hot, with rice or naan.
