Spicy Indian Pork Curry

Ingredients:

  • 2 lbs Pork shoulder
  • 3 Garlic cloves
  • 2 Onions
  • 2 Tomatoes
  • 1 inch Fresh ginger
  • 1 tsp Ground turmeric
  • 1 tsp Ground cumin
  • 1 tsp Ground coriander
  • 1 tsp Red chili powder
  • 1 tsp Garam masala
  • 1 tsp Salt
  • 2 tbsp Vegetable oil
  • Handful Fresh coriander leaves

Instructions:

  1. Cut the pork into bite-sized pieces. Mince the garlic and ginger, and thinly slice the onions and tomatoes.
  2. Heat the vegetable oil in a large pan over medium heat. Add the onions and fry until they become translucent.
  3. Add the garlic and ginger to the pan and fry for another 2 minutes.
  4. Add the ground turmeric, cumin, coriander, red chili powder, garam masala, and salt to the pan and stir well to combine.
  5. Add the pork to the pan and sear on all sides until it starts to brown, about 5 minutes.
  6. Add the tomatoes to the pan and stir well to combine. Lower the heat to low, cover the pan, and let it cook for 45 minutes.
  7. Take off the lid and stir the curry. If it is too thick, add a bit of water to thin it out.
  8. Cook the curry for another 15 minutes on low heat. Garnish with fresh coriander leaves before serving.
