Spicy Indian Pork Curry

Ingredients:
- 2 lbs Pork shoulder
- 3 Garlic cloves
- 2 Onions
- 2 Tomatoes
- 1 inch Fresh ginger
- 1 tsp Ground turmeric
- 1 tsp Ground cumin
- 1 tsp Ground coriander
- 1 tsp Red chili powder
- 1 tsp Garam masala
- 1 tsp Salt
- 2 tbsp Vegetable oil
- Handful Fresh coriander leaves
Instructions:
- Cut the pork into bite-sized pieces. Mince the garlic and ginger, and thinly slice the onions and tomatoes.
- Heat the vegetable oil in a large pan over medium heat. Add the onions and fry until they become translucent.
- Add the garlic and ginger to the pan and fry for another 2 minutes.
- Add the ground turmeric, cumin, coriander, red chili powder, garam masala, and salt to the pan and stir well to combine.
- Add the pork to the pan and sear on all sides until it starts to brown, about 5 minutes.
- Add the tomatoes to the pan and stir well to combine. Lower the heat to low, cover the pan, and let it cook for 45 minutes.
- Take off the lid and stir the curry. If it is too thick, add a bit of water to thin it out.
- Cook the curry for another 15 minutes on low heat. Garnish with fresh coriander leaves before serving.
