
Spicy Indian Midnight Vegetable Curry

Ingredients:
- 2 cups Mixed Vegetables
- 1 large Onion
- 2 medium Tomato
- 3 cloves Garlic
- 1 inch Fresh Ginger
- 2 Green Chili
- 1 tbsp Curry Powder
- 1/2 tsp Garam Masala
- 1/4 tsp Turmeric Powder
- 1 tsp Cumin seeds
- a handful Coriander leaves
- To taste Salt
- 2 tbsp Vegetable oil
Instructions:
- Chop the vegetables and keep them aside.
- In a pan, heat vegetable oil. Add cumin seeds and let them splutter.
- Add finely chopped onions and saute until golden brown.
- Add finely chopped garlic, ginger and green chilies. Saute for a minute.
- Add the chopped tomatoes, and cook until they become mushy.
- Add curry powder, garam masala, and turmeric. Saute for a minute.
- Add the chopped vegetables and salt. Mix well, cover the pan and cook on medium heat for about 15 minutes or until the vegetables are cooked.
- Garnish with coriander leaves before serving.
- Serve hot with rice or Indian bread.
