Spicy Indian Midnight Vegetable Curry

Ingredients:

  • 2 cups Mixed Vegetables
  • 1 large Onion
  • 2 medium Tomato
  • 3 cloves Garlic
  • 1 inch Fresh Ginger
  • 2 Green Chili
  • 1 tbsp Curry Powder
  • 1/2 tsp Garam Masala
  • 1/4 tsp Turmeric Powder
  • 1 tsp Cumin seeds
  • a handful Coriander leaves
  • To taste Salt
  • 2 tbsp Vegetable oil

Instructions:

  1. Chop the vegetables and keep them aside.
  2. In a pan, heat vegetable oil. Add cumin seeds and let them splutter.
  3. Add finely chopped onions and saute until golden brown.
  4. Add finely chopped garlic, ginger and green chilies. Saute for a minute.
  5. Add the chopped tomatoes, and cook until they become mushy.
  6. Add curry powder, garam masala, and turmeric. Saute for a minute.
  7. Add the chopped vegetables and salt. Mix well, cover the pan and cook on medium heat for about 15 minutes or until the vegetables are cooked.
  8. Garnish with coriander leaves before serving.
  9. Serve hot with rice or Indian bread.
