
Spicy Indian Midnight Beef Curry

Ingredients:
- 2 tablespoons Vegetable oil
- 1 tablespoon Fresh ginger, grated
- 2 cloves Garlic cloves, minced
- 1 Onion, finely chopped
- 1 teaspoon Cumin, ground
- 1 teaspoon Turmeric, ground
- 1 teaspoon Garam masala
- 1 teaspoon Cayenne pepper
- 2 tablespoons Tomato paste
- 1 pound Beef stew meat, cubed
- Salt, to taste
- Handful Fresh cilantro, for garnish
Instructions:
- 1. Heat the oil in a large skillet over medium heat.
- 2. Add the ginger, garlic, and onion, stirring frequently, until the onion is translucent, about 5 minutes.
- 3. Stir in the cumin, turmeric, garam masala, and cayenne pepper, and cook for another 1-2 minutes until fragrant.
- 4. Stir in the tomato paste and cook for another minute.
- 5. Add the beef cubes to the skillet, seasoning with salt, and stir until the beef is well coated with the spice mixture.
- 6. Cover the skillet and reduce the heat to low. Simmer until the beef is tender, about 30 minutes. Add a splash of water from time to time, if needed, to prevent the curry from drying out.
