Spicy Indian Midnight Beef Curry

Ingredients:

  • 2 tablespoons Vegetable oil
  • 1 tablespoon Fresh ginger, grated
  • 2 cloves Garlic cloves, minced
  • 1 Onion, finely chopped
  • 1 teaspoon Cumin, ground
  • 1 teaspoon Turmeric, ground
  • 1 teaspoon Garam masala
  • 1 teaspoon Cayenne pepper
  • 2 tablespoons Tomato paste
  • 1 pound Beef stew meat, cubed
  • Salt, to taste
  • Handful Fresh cilantro, for garnish

Instructions:

  1. 1. Heat the oil in a large skillet over medium heat.
  2. 2. Add the ginger, garlic, and onion, stirring frequently, until the onion is translucent, about 5 minutes.
  3. 3. Stir in the cumin, turmeric, garam masala, and cayenne pepper, and cook for another 1-2 minutes until fragrant.
  4. 4. Stir in the tomato paste and cook for another minute.
  5. 5. Add the beef cubes to the skillet, seasoning with salt, and stir until the beef is well coated with the spice mixture.
  6. 6. Cover the skillet and reduce the heat to low. Simmer until the beef is tender, about 30 minutes. Add a splash of water from time to time, if needed, to prevent the curry from drying out.
