Spicy Indian Fruit Curry

Ingredients:

  • 2 cups cubed Mix of fruits (Apple, Banana, Pear, Pineapple)
  • 1 finely chopped Onions
  • 1 teaspoon Ginger garlic paste
  • 2 finely chopped Green Chillies
  • 1 tablespoon Curry Powder
  • 1/2 teaspoon Turmeric Powder
  • 1/2 teaspoon Cumin Seeds
  • 2 tablespoon Vegetable oil
  • To taste Salt
  • A handful finely chopped Fresh Coriander Leaves

Instructions:

  1. Heat oil in a pan, add the cumin seeds. When they start to splutter, add the chopped onions, green chillies and ginger garlic paste. Saute until the onions become transparent.
  2. Add the curry powder, turmeric powder, and salt. Mix well.
  3. Now add the cubed fruits. Stir well to ensure all pieces are coated with the masala.
  4. Cover and cook for about 15-20 minutes on medium heat until the fruits are soft. If the curry is too dry, add a splash of water.
  5. Top with fresh coriander leaves just before serving. Enjoy your Spicy Indian Fruit Curry with a warm scoop of basmati rice or a piece of naan bread.
