
Spicy Indian Breakfast Rice

Ingredients:
- 1 cup Basmati Rice
- 2 cups Water
- 4 whole Green Chillies
- 1 whole Onion
- 10 leaves Curry Leaves
- 1 teaspoon Mustard Seeds
- 2 tablespoons Cooking Oil
- to taste Salt
Instructions:
- Rinse the rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.
- In a saucepan, bring the water to a boil. Add the rice, reduce the heat to low, and cover the pan. Cook for 15-20 minutes, until the rice is tender and the water is absorbed.
- While the rice is cooking, finely chop the green chillies and onion. Heat the oil in a frying pan over medium heat, add the mustard seeds and curry leaves, and sauté until the mustard seeds start popping.
- Add the chopped onions and green chillies to the frying pan, and sauté until the onions become translucent.
- Add the cooked rice and salt to the frying pan, and stir well to combine. Sauté the rice for a few more minutes, until it is fully coated with the spices.
- Serve the Spicy Indian Breakfast Rice hot.
