Spicy Indian Breakfast Rice

Ingredients:

  • 1 cup Basmati Rice
  • 2 cups Water
  • 4 whole Green Chillies
  • 1 whole Onion
  • 10 leaves Curry Leaves
  • 1 teaspoon Mustard Seeds
  • 2 tablespoons Cooking Oil
  • to taste Salt

Instructions:

  1. Rinse the rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.
  2. In a saucepan, bring the water to a boil. Add the rice, reduce the heat to low, and cover the pan. Cook for 15-20 minutes, until the rice is tender and the water is absorbed.
  3. While the rice is cooking, finely chop the green chillies and onion. Heat the oil in a frying pan over medium heat, add the mustard seeds and curry leaves, and sauté until the mustard seeds start popping.
  4. Add the chopped onions and green chillies to the frying pan, and sauté until the onions become translucent.
  5. Add the cooked rice and salt to the frying pan, and stir well to combine. Sauté the rice for a few more minutes, until it is fully coated with the spices.
  6. Serve the Spicy Indian Breakfast Rice hot.
