
Spicy Indian Breakfast Pasta

Ingredients:
- 2 cups Pasta
- 2 tablespoons Olive oil
- 1 large Onion
- 3 pieces Green chillies
- 2 pieces Garlic cloves
- 1 inch piece Ginger
- 2 large Tomatoes
- 1 teaspoon Garam masala
- 1/2 teaspoon Turmeric powder
- 1 teaspoon Red chilli powder
- 1 teaspoon Cumin powder
- to taste Salt
- 1 bunch Fresh coriander
Instructions:
- Boil the pasta according to package instructions until al dente, then drain and set aside.
- Heat the olive oil in a large pan over medium heat.
- Dice the onion, chop the green chillies, mince the garlic cloves and ginger, and slice the tomatoes. Add these to the pan and stir until the onions are browned.
- Add the garam masala, turmeric powder, red chilli powder, cumin powder, and salt to the pan. Stir to combine.
- Add the cooked pasta to the pan and stir until the pasta is coated with the spice mixture and heated through.
- Garnish with chopped fresh coriander before serving.
