Spicy Indian Breakfast Pasta

Ingredients:

  • 2 cups Pasta
  • 2 tablespoons Olive oil
  • 1 large Onion
  • 3 pieces Green chillies
  • 2 pieces Garlic cloves
  • 1 inch piece Ginger
  • 2 large Tomatoes
  • 1 teaspoon Garam masala
  • 1/2 teaspoon Turmeric powder
  • 1 teaspoon Red chilli powder
  • 1 teaspoon Cumin powder
  • to taste Salt
  • 1 bunch Fresh coriander

Instructions:

  1. Boil the pasta according to package instructions until al dente, then drain and set aside.
  2. Heat the olive oil in a large pan over medium heat.
  3. Dice the onion, chop the green chillies, mince the garlic cloves and ginger, and slice the tomatoes. Add these to the pan and stir until the onions are browned.
  4. Add the garam masala, turmeric powder, red chilli powder, cumin powder, and salt to the pan. Stir to combine.
  5. Add the cooked pasta to the pan and stir until the pasta is coated with the spice mixture and heated through.
  6. Garnish with chopped fresh coriander before serving.
