Spicy Indian Biryani

Ingredients:

  • 2 cups Basmati Rice
  • 500 grams Chicken thighs (boneless)
  • 2 piece Onion
  • 5 cloves Garlic
  • 1 inch piece Ginger
  • 2 piece Tomatoes
  • 2 piece Green Chillies
  • 1 tsp Garam Masala
  • 1 tsp Red chili powder
  • 1 tsp Turmeric powder
  • to taste Salt
  • 3 tbsp Cooking oil
  • 1 cup Yogurt
  • for garnish Fresh coriander leaves
  • for garnish Fresh mint leaves
  • few Saffron strands (soaked in 2 tbsp hot milk)

Instructions:

  1. Wash and soak the rice for 30 minutes. Cook the rice until half-done and then drain out the water. Set it aside
  2. Take a large frying pan, add oil, when it gets hot, add finely chopped onions and sauté them until they are golden brown.
  3. Add ginger and garlic paste to the pan and sauté it for a few minutes. Now, add chopped tomatoes and green chilies. Cook until soft and mushy.
  4. Add chicken thighs to the pan and mix. Cook until chicken changes color. Now, Add red chili powder, garam masala, turmeric powder, and salt. Mix them well and cook until the oil gets separated.
  5. Add yogurt to the pan and mix again. Cook it covered for about 10 minutes or until the chicken is fully cooked.
  6. Preheat an oven at 180°C. In a baking tray, add a layer of half-cooked rice at the bottom, sprinkle some fresh coriander and mint leaves.
  7. On top of the rice, spread a layer of cooked chicken mixture. Repeat these layers until you have used all the rice and chicken.
  8. Pour the soaked saffron strands on top of the layers. Cover the tray with aluminum foil.
  9. Place the tray in the pre-heated oven and cook for about 20 - 30 minutes.
  10. Delicious spicy biryani is ready. Serve hot garnished with coriander leaves.
