Spicy Fruit Salad with Quinoa

Ingredients:

  • 1 cup quinoa
  • 2 cups water
  • 1 pinch of salt
  • 1 cup blueberries
  • 2 mangoes
  • 1 cup strawberries
  • 1 jalapeño pepper
  • 2 tablespoons lime juice
  • 2 tablespoons honey
  • 1/4 cup fresh mint leaves

Instructions:

  1. Rinse the quinoa under cold water until the water runs clear. Place the quinoa in a medium saucepan with 2 cups of water and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for around 15 minutes, or until the quinoa is cooked and fluffy.
  2. While the quinoa is cooking, prepare the fruits. Dice the mangoes, slice the strawberries, and remove the seeds from the jalapeño and finely dice. Combine these in a large bowl, then add in the blueberries.
  3. Prepare the dressing by mixing together the lime juice and honey. Pour this over the fruit and mix well.
  4. Once the quinoa is done, let it cool for a few minutes, then add it into the bowl with the fruits. Toss well to combine everything, then garnish with the fresh mint leaves.
  5. Serve the salad while still warm, but it can also be enjoyed cold.
