
Spicy Fruit Salad with Quinoa

Ingredients:
- 1 cup quinoa
- 2 cups water
- 1 pinch of salt
- 1 cup blueberries
- 2 mangoes
- 1 cup strawberries
- 1 jalapeño pepper
- 2 tablespoons lime juice
- 2 tablespoons honey
- 1/4 cup fresh mint leaves
Instructions:
- Rinse the quinoa under cold water until the water runs clear. Place the quinoa in a medium saucepan with 2 cups of water and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for around 15 minutes, or until the quinoa is cooked and fluffy.
- While the quinoa is cooking, prepare the fruits. Dice the mangoes, slice the strawberries, and remove the seeds from the jalapeño and finely dice. Combine these in a large bowl, then add in the blueberries.
- Prepare the dressing by mixing together the lime juice and honey. Pour this over the fruit and mix well.
- Once the quinoa is done, let it cool for a few minutes, then add it into the bowl with the fruits. Toss well to combine everything, then garnish with the fresh mint leaves.
- Serve the salad while still warm, but it can also be enjoyed cold.
