Spicy Fruit Ratatouille

Ingredients:

  • 1 medium size eggplant
  • 1 medium size zucchini
  • 1 medium size green bell pepper
  • 1 medium size red bell pepper
  • 2 cups cherry tomatoes
  • 2 pieces hot peppers
  • 2 pieces garlic cloves
  • 3 tablespoons olive oil
  • to taste salt and black pepper
  • 1 bunch fresh basil leaves
  • 1 tablespoon fresh thyme leaves
  • 2 pieces ripe peaches

Instructions:

  1. Chop the eggplant, zucchini, bell peppers, hot peppers and peaches into bite-sized pieces.
  2. Halve the cherry tomatoes and mince the garlic cloves.
  3. Heat the olive oil in a large pan or pot over medium heat. Add the chopped vegetables, peaches and garlic into the pan.
  4. Season with salt, pepper, and thyme leaves. Stir to combine.
  5. Cover the pan and let it simmer for about 30 minutes, or until all the vegetables are soft and the flavors have melded together.
  6. Stir in the fresh basil leaves and cook for another 5 minutes.
  7. Serve the Spicy Fruit Ratatouille warm with a chunk of crusty bread on the side.
