Spicy Fruit Ratatouille

Ingredients:
- 1 medium size eggplant
- 1 medium size zucchini
- 1 medium size green bell pepper
- 1 medium size red bell pepper
- 2 cups cherry tomatoes
- 2 pieces hot peppers
- 2 pieces garlic cloves
- 3 tablespoons olive oil
- to taste salt and black pepper
- 1 bunch fresh basil leaves
- 1 tablespoon fresh thyme leaves
- 2 pieces ripe peaches
Instructions:
- Chop the eggplant, zucchini, bell peppers, hot peppers and peaches into bite-sized pieces.
- Halve the cherry tomatoes and mince the garlic cloves.
- Heat the olive oil in a large pan or pot over medium heat. Add the chopped vegetables, peaches and garlic into the pan.
- Season with salt, pepper, and thyme leaves. Stir to combine.
- Cover the pan and let it simmer for about 30 minutes, or until all the vegetables are soft and the flavors have melded together.
- Stir in the fresh basil leaves and cook for another 5 minutes.
- Serve the Spicy Fruit Ratatouille warm with a chunk of crusty bread on the side.
