
Spicy Fruit Penne

Ingredients:
- 500 grams penne pasta
- 2 tablespoons extra virgin olive oil
- 3 cloves garlic
- 1 medium onion
- 1 teaspoon red chili flakes
- 5 medium ripe tomatoes
- 1 large red bell pepper
- 1 large yellow bell pepper
- to taste salt
- to taste black pepper
- 1 cup fresh basil leaves
- to garnish Parmesan cheese
Instructions:
- Cook the penne pasta according to the package instructions until al dente. Drain and set aside.
- While the pasta is cooking, heat the olive oil in a large pan over medium heat. Add the garlic and onion, and sauté until the onion is translucent.
- Add the red chili flakes to the pan and sauté for another minute.
- Chop the tomatoes and bell peppers, and add them to the pan. Cook until the vegetables are softened.
- Season the vegetables with salt and pepper. Add the basil leaves and stir to combine.
- Add the cooked pasta to the pan and stir to combine. Cook for another few minutes, until the pasta is heated through.
- Serve the pasta in bowls, garnished with Parmesan cheese. Enjoy your spicy fruit penne!
