Spicy Fruit Penne

Ingredients:

  • 500 grams penne pasta
  • 2 tablespoons extra virgin olive oil
  • 3 cloves garlic
  • 1 medium onion
  • 1 teaspoon red chili flakes
  • 5 medium ripe tomatoes
  • 1 large red bell pepper
  • 1 large yellow bell pepper
  • to taste salt
  • to taste black pepper
  • 1 cup fresh basil leaves
  • to garnish Parmesan cheese

Instructions:

  1. Cook the penne pasta according to the package instructions until al dente. Drain and set aside.
  2. While the pasta is cooking, heat the olive oil in a large pan over medium heat. Add the garlic and onion, and sauté until the onion is translucent.
  3. Add the red chili flakes to the pan and sauté for another minute.
  4. Chop the tomatoes and bell peppers, and add them to the pan. Cook until the vegetables are softened.
  5. Season the vegetables with salt and pepper. Add the basil leaves and stir to combine.
  6. Add the cooked pasta to the pan and stir to combine. Cook for another few minutes, until the pasta is heated through.
  7. Serve the pasta in bowls, garnished with Parmesan cheese. Enjoy your spicy fruit penne!
